Chickpea Curry

Curry can be an expensive option while eating out. Enjoy this inexpensive and healthy recipe for an Indian experience at home. Although this dish may have such little ingredients, it brings so much flavor and nutrition to your soul.

Vegan homemade chickpea curry with basmati rice

Ingredients

Chickpea Curry

  • 1 shallot onion
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 can chickpeas
  • 1 can coconut milk
  • 2-3 tbsp tomato paste
  • 1 can diced tomatoes
  • 2 tbsp Bombay Masala Spice Blend
  • 1 tbsp turmeric

Brown Basmati Rice

  • 1 cup of brown basmati rice
  • 2 1/2 cups of water
  • 1 tsp salt

Instructions

Step 1: Add water and rice to a pot and bring to a boil and immediately bring to a simmer. Let rice simmer with a lid until water is completely dissolved.

Step 2: While rice cooks, chop shallots and add into pot with oil to sauté with garlic powder and salt.

Step 3: Once shallots are golden, add in rinsed chickpeas and diced tomatoes and let them sauté for a minute.

Step 4: Add can of coconut milk, tomato paste, and spices to the pot of chickpeas.

Step 5: Let chickpea curry simmer until at desired thickness.

Step 6: Plate cooked rice and chickpea curry for an Indian inspired dinner!
