Buying frozen veggie burgers can get expensive and repetitive. Honestly, there aren’t many vegan veggie burgers that are both healthy and tasty. Why not make your own!

Ingredients
- 2 cans of black beans
- 1 cup of frozen corn
- Half a large red onion
- 1 cup of baby spinach
- 1 tsp olive oil
- 1/2 cup of red quinoa
- 1 cup of rolled oats
- 1 cup of all-purpose flour
- 1 tbsp cumin powder
- 1/2 tbsp cayenne pepper
- 1 tsp chilli powder
- 1 tsp garlic powder
- 1 tsp salt
Instructions
Step 1: Pre-heat oven to 350 degrees.
Step 2: Bring a 1.5 cups of water to a pot with the 1 cup of red quinoa. Bring to a boil then immediately to a simmer with the lid on. Cook until water is evaporated and there are little white curls on the grains.
Step 3: Chop red onions and baby spinach then sauté with frozen corn in a pan until red onions are soft but not completely brown.
Step 4: Add black beans into a bowl and mash leaving 1/5 of the beans full.
Step 5: Once quinoa is cooked, add to black beans and mix with the red onions, baby spinach, corn, rolled oats, and all-purpose flour.
Step 6: Mix in seasoning and add more to the burgers depending on how spicy you want them.
Step 7: Once mix is completely combined, form into palm size patties or to the size of your burger buns.
Step 8: Place patties onto a non-stick pan and bake for 15 minutes then flip and bake for another 15 minutes.
Step 9: Enjoy with a your choice of burger toppings or as is!
Eat within a few days of baking or freeze leftovers for a couple weeks but no longer so they don’t dry out.
