One worry all vegetarian and vegans have is ending up with fish sauce in there dish while dining out at an Asian restaurant. Pad Thai is an iconic Thai dish but it isn’t always made vegetarian or vegan unless specified but even then, you never know what you may be getting. Here’s a quick and easy at home Pad Thai recipe.
- 1 box of rice noodles of your choice (I used Amy Chun’s brown rice noodles)
- 1 head of broccoli
- 1 red bell pepper
- 1 bunch of green onions
- A can of peanuts
- 3 tbsp of soy sauce
- 2 tbsp of Sriracha
- 1 tbsp rice vinegar
- ½ a lime juiced (other half for the side)
Step 1: Start boiling a pot of water and chop your broccoli, peppers, green onions, and peanuts.
Step 2: Sauté your vegetables until soft.
Step 3: Place Rice noodles into boiling water. They shouldn’t be in there for more than 5 minutes but soak until soft.
Step 4: Once noodles are soft drain them and immediately pour cold water on them. Make sure all the noodles are immersed in cold water. This keeps the noodles from becoming sticky.
Step 5: Add noodles into pan with sautéed veggies and add soy sauce, Sriracha, rice vinegar, lime, and crushed peanuts.
Once everything is mixed evenly, plate yourself some Pad Thai and dig in!
